Crisp toast topped with roasted butternut and ricotta makes a lunch that feels both easy and special.
Why is butternut toast so useful?
Roasted butternut turns simple toast into something more filling and interesting. Ricotta adds creaminess, honey brings gentle sweetness and chili gives a little heat. It works well as lunch, brunch or a small starter.

Ingredients
- butternut squash – 10 oz, roasted
- country bread – 8 slices
- ricotta – 1 cup
- honey – 2 tsp
- chili flakes – 1/4 tsp
- olive oil – 1 tbsp
- salt – to taste
- black pepper – to taste
Method
STEP 1
Toast the bread until crisp and golden.
STEP 2
Season the ricotta with a little salt and black pepper and spread it generously over the warm toast.
STEP 3
Top with the roasted butternut.
STEP 4
Finish with the honey, olive oil and chili flakes and serve straight away.
