Warm crusty rolls filled with roasted butternut, aged cheese and peppery arugula make a satisfying lunch.
Why use butternut in warm rolls?
Roasted butternut makes a roll softer, sweeter and more filling than cheese or salad alone. Aged cheese adds savouriness and arugula brings peppery freshness. It turns a simple lunch into something with more character.

Ingredients
- butternut squash – 10 oz, roasted in slices
- crusty rolls – 4
- aged cheese – 4 oz, sliced
- arugula – 2 cups
- mustard mayonnaise – 4 tbsp
- salt – to taste
- black pepper – to taste
Method
STEP 1
Slice open the warm rolls and spread the insides with mustard mayonnaise.
STEP 2
Layer in the roasted butternut and aged cheese.
STEP 3
Add the arugula and season lightly with salt and black pepper.
STEP 4
Serve while the bread is still warm and crisp.
