Creamy rice pudding enriched with butternut and vanilla is a gentle dessert with real autumn charm.
Why add butternut to rice pudding?
Butternut works well in rice pudding because it becomes soft and makes the vanilla flavour feel fuller. Cinnamon adds warmth and keeps the dessert from tasting flat. It gives classic rice pudding a gentle autumn twist.

Ingredients
- pudding rice – 3/4 cup
- whole milk – 4 cups
- butternut purée – 3/4 cup
- sugar – 1/4 cup
- vanilla extract – 1 tsp
- ground cinnamon – 1/2 tsp
- salt – a pinch
Method
STEP 1
Put the rice, milk and a pinch of salt into a saucepan and bring gently to a simmer.
STEP 2
Cook over low heat for 25 to 30 minutes, stirring often, until the rice is tender and creamy.
STEP 3
Stir in the butternut purée, sugar, vanilla and cinnamon and cook for 5 minutes more.
STEP 4
Spoon into bowls and let cool. Serve chilled or at room temperature.
