Layered butternut baked with tomato sauce and mozzarella becomes a deeply comforting oven dish.

What is butternut parmigiana?

Butternut parmigiana is a vegetarian take on the Italian baked dish with layers of vegetables, tomato sauce and cheese. The butternut gives the dish extra sweetness and a soft texture while keeping the comforting feel of parmigiana.

Preparation time: 60 min

Ingredients

  • butternut squash – 1 medium, peeled and sliced
  • tomato passata – 2 cups
  • mozzarella – 8 oz, torn
  • Parmesan – 1/2 cup, grated
  • olive oil – 2 tbsp
  • garlic – 2 cloves, minced
  • basil – 2 tbsp, chopped
  • salt – to taste
  • black pepper – to taste

Method

STEP 1
Roast the butternut slices at 400°F with 1 tablespoon olive oil, salt and pepper for 20 minutes until partly tender.
STEP 2
Warm the remaining olive oil in a pan and cook the garlic briefly. Stir in the passata and basil and simmer for 10 minutes.
STEP 3
Layer the butternut, tomato sauce and mozzarella in a baking dish. Finish with Parmesan.
STEP 4
Bake for 25 minutes until bubbling and golden at the edges.
