This juicy meatloaf gets extra softness from butternut and a savory finish from bacon and sage.

Butternut makes meatloaf juicier and softer, especially when baked with bacon and sage. The sweet vegetable balances the savoury flavours. Let the meatloaf rest briefly before slicing for the best texture.

Ingredients

  • ground beef and pork – 1 3/4 lb
  • grated butternut – 1 1/2 cups
  • egg – 1
  • breadcrumbs – 3/4 cup
  • bacon – 6 slices
  • onion – 1, chopped fine
  • sage – 1 tbsp, chopped
  • salt – to taste
  • black pepper – to taste

Method

STEP 1
Heat the oven to 375°F and line a loaf tin or baking tray.
STEP 2
Mix the ground meat with the grated butternut, egg, breadcrumbs, onion, sage, salt and black pepper.
STEP 3
Shape into a loaf and lay the bacon slices over the top.
STEP 4
Bake for 50 to 60 minutes until cooked through and lightly browned. Rest for 10 minutes before slicing.
