Juicy meatballs with grated butternut stay tender and sweet in a rich tomato sauce.
Why add butternut to meatballs?
Grated butternut helps meatballs stay tender and adds gentle sweetness to the sauce. The tomato sauce carries that flavour well and keeps the dish familiar. It is comfort food with extra vegetables built in.

Ingredients
- ground beef and pork – 1 1/2 lb
- grated butternut – 1 cup
- egg – 1
- breadcrumbs – 1/2 cup
- onion – 1 small, grated
- salt – to taste
- black pepper – to taste
- olive oil – 1 tbsp
- tomato passata – 2 cups
- garlic – 2 cloves, minced
- oregano – 1 tsp
Method
STEP 1
Mix the ground meat with the grated butternut, egg, breadcrumbs, onion, salt and black pepper. Shape into meatballs.
STEP 2
Brown the meatballs in the olive oil in a large pan.
STEP 3
Add the garlic, passata and oregano and bring to a gentle simmer.
STEP 4
Cover and cook for 20 minutes until the meatballs are cooked through and the sauce is rich.
