Cheesy macaroni gets extra silkiness and color from butternut in this crowd-pleasing oven dish.
What does butternut add to mac and cheese?
Butternut makes macaroni and cheese softer and a little lighter in flavour without taking away the creamy cheese sauce. Cheddar adds sharpness and the crunchy topping gives the contrast a pasta bake needs.

Ingredients
- macaroni – 12 oz
- butternut purée – 1 cup
- milk – 2 cups
- cheddar – 2 cups, grated
- butter – 3 tbsp
- flour – 3 tbsp
- breadcrumbs – 1/2 cup
- salt – to taste
- black pepper – to taste
- nutmeg – 1/4 tsp
Method
STEP 1
Cook the macaroni until just al dente and drain.
STEP 2
Melt the butter in a saucepan, stir in the flour and cook for 1 minute. Whisk in the milk and cook until thickened.
STEP 3
Stir in the butternut purée, most of the cheddar, salt, black pepper and nutmeg. Fold in the macaroni.
STEP 4
Spoon into a baking dish, top with the remaining cheddar and breadcrumbs, and bake at 390°F for 20 minutes until bubbling and golden.
