What are butternut bitterballen?
Butternut bitterballen are a vegetarian party snack inspired by the Dutch classic. The filling is creamy and gently sweet, while the crisp coating gives the familiar bitterbal bite. Mustard mayonnaise adds extra sharpness.

Ingredients
- butternut purée – 1 cup
- butter – 3 tbsp
- all-purpose flour – 4 tbsp
- milk – 1 cup
- grated cheese – 1/2 cup
- breadcrumbs – 1 cup
- egg – 1, beaten
- oil – for frying
- mayonnaise – 4 tbsp
- mustard – 1 tbsp
- hot sauce – 1 tsp
- salt – to taste
- black pepper – to taste
Method
STEP 1
Melt the butter in a saucepan, stir in the flour and cook for 1 minute. Whisk in the milk and cook until thick.
STEP 2
Stir in the butternut purée and grated cheese and season with salt and black pepper. Chill the mixture until firm.
STEP 3
Shape into small balls, coat with beaten egg and breadcrumbs, and chill again for 20 minutes.
STEP 4
Fry until deep golden and crisp.
STEP 5
Mix the mayonnaise with mustard and hot sauce and serve alongside.
