Bush tomato gives this damper a savoury, sun-dried depth that turns a simple quick bread into something much more characterful. It is especially good alongside soups, stews or grilled food.

Ingredients
- Self-raising flour – 500 g
- Bush tomato, chopped – 2 tbsp
- Salt – 1 tsp
- Butter – 60 g
- Milk – 300 ml
Method
1. Mix the flour, bush tomato and salt in a large bowl.
2. Rub in the butter until crumbly, then add the milk and mix to a soft dough.
3. Shape into a round and score the top deeply.
4. Bake until the crust is firm and the loaf sounds hollow when tapped.
5. Cool slightly, then slice and serve while still warm so the savoury aroma is at its best.
