Burrata bruschetta

Warm toast topped with creamy burrata, green vegetables and herbs feels like a more generous cousin of classic bruschetta.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • Country bread – 4 large slices
  • Burrata – 2 balls
  • Broad beans or peas – 100 g
  • Sugar snap peas – 100 g
  • Radishes – 4
  • Fresh mint – 2 tbsp
  • Olive oil – 3 tbsp
  • Lemon juice – 1 tbsp
  • Salt and black pepper – to taste

Method

1. Toast the bread until golden.
2. Blanch the broad beans and sugar snaps briefly, then refresh in cold water.
3. Dress the vegetables with olive oil, lemon juice, mint, salt and pepper.
4. Top the toast with torn burrata and the dressed vegetables and serve while the toast is still slightly warm.
