Spring onions fried until deeply sweet and savoury turn simple noodles into something special in minutes.

Ingredients
- spring onions – 4
- neutral oil – 3 tbsp
- soy sauce – 2 tbsp
- sugar – 1 tsp
- wheat noodles – 150 g
Method
STEP 1
Cut the spring onions into lengths, keeping the white and green parts together.
STEP 2
Heat the oil in a small pan and fry the spring onions slowly until they darken and take on a deep roasted aroma.
STEP 3
Stir in the soy sauce and sugar and let the mixture bubble briefly into a fragrant dressing.
STEP 4
Cook the noodles according to the packet instructions and drain well.
STEP 5
Toss the hot noodles with the spring onion oil until every strand is coated.
STEP 6
Serve immediately, making sure some of the browned spring onion lands on top.
