Bulgogi Burger with Kimchi Mayo

A burger glazed with bulgogi-style sauce, served with kimchi mayonnaise and quick pickled daikon.

Serves: 4 people

Preparation time: 40 min

Ingredients

  • Ground beef – 600 g
  • Burger buns – 4
  • Soy sauce – 4 tbsp
  • Gochujang – 1 tbsp
  • Brown sugar – 1 tbsp
  • Garlic – 2 cloves
  • Fresh ginger – 2 cm
  • Sesame oil – 2 tsp
  • Mayonnaise – 120 g
  • Chopped kimchi – 100 g
  • Daikon or radish, thinly sliced – 150 g
  • Rice vinegar – 3 tbsp
  • Sesame seeds – 1 tbsp

Method

STEP 1
Stir soy sauce, gochujang, brown sugar, garlic, ginger and sesame oil into a glossy bulgogi-style sauce.

STEP 2
Mix mayonnaise with chopped kimchi. Toss the daikon or radish with rice vinegar and a pinch of salt, then set aside so it softens slightly.

STEP 3
Shape the beef into four burgers. Fry or grill them until browned and almost cooked through.

STEP 4
Brush the burgers with the bulgogi sauce and cook briefly on both sides. The sugar in the sauce can burn, so keep the heat under control and glaze near the end.

STEP 5
Toast the buns. Build the burgers with kimchi mayo, pickled daikon, the glazed burger and sesame seeds. Serve hot.
