A rustic Bulgarian bean soup with paprika, tomato and savory herbs.

Serves: 4 people

Ingredients

  • dried white beans – 1 cup
  • olive oil – 1 tbsp
  • onion, chopped – 1
  • carrot, chopped – 1
  • celery stalk, chopped – 1
  • red bell pepper, chopped – 1
  • tomatoes, chopped – 2
  • paprika – 1 tsp
  • vegetable stock or water – 6 cups
  • dried savory or thyme – 1 tsp
  • parsley, chopped – 2 tbsp
  • salt – to taste
  • black pepper – to taste

Method

1. Soak the beans overnight, then drain them.
2. Heat the olive oil and cook the onion, carrot, celery and pepper for 5 minutes.
3. Add the tomatoes, paprika, beans and stock and simmer until the beans are tender.
4. Season with savory, salt and black pepper and cook for 5 minutes more.
5. Finish with parsley and serve hot.
