A rustic Bulgarian bean soup with paprika, tomato and savory herbs.

Ingredients
- dried white beans – 1 cup
- olive oil – 1 tbsp
- onion, chopped – 1
- carrot, chopped – 1
- celery stalk, chopped – 1
- red bell pepper, chopped – 1
- tomatoes, chopped – 2
- paprika – 1 tsp
- vegetable stock or water – 6 cups
- dried savory or thyme – 1 tsp
- parsley, chopped – 2 tbsp
- salt – to taste
- black pepper – to taste
Method
1. Soak the beans overnight, then drain them.
2. Heat the olive oil and cook the onion, carrot, celery and pepper for 5 minutes.
3. Add the tomatoes, paprika, beans and stock and simmer until the beans are tender.
4. Season with savory, salt and black pepper and cook for 5 minutes more.
5. Finish with parsley and serve hot.
