A beloved Belgian brasserie dessert of airy Brussels waffles served with vanilla ice cream, whipped cream and warm chocolate sauce.
Serves: 4 people

Ingredients
- all-purpose flour – 2 cups
- granulated sugar – 2 tbsp
- baking powder – 2 tsp
- salt – 1/4 tsp
- whole milk – 1 3/4 cups
- eggs, separated – 2
- unsalted butter, melted – 1/2 cup
- vanilla extract – 1 tsp
- vanilla ice cream – 4 scoops
- heavy cream – 1 cup
- powdered sugar – 2 tbsp
- dark chocolate, finely chopped – 4 oz
- heavy cream for the sauce – 1/2 cup
Method
1. Whisk the flour, sugar, baking powder and salt together in a bowl. In a second bowl mix the milk, egg yolks, melted butter and vanilla extract. Stir the wet ingredients into the dry ingredients until smooth.
2. Beat the egg whites to soft peaks and fold them gently into the batter to keep it light.
3. Bake the waffles in a preheated waffle iron until golden and crisp on the outside.
4. Whip the cream with the powdered sugar until softly whipped. Melt the chopped chocolate with the cream for the sauce over low heat until smooth.
5. Serve each waffle warm with a scoop of vanilla ice cream, whipped cream and warm chocolate sauce.
