Brunswick stew is a thick Southern American soup-stew made with chicken, tomato, corn and lima beans. It is warm, hearty and deeply homestyle.

Ingredients
- boneless chicken thighs, cut into pieces – 1 lb 2 oz
- onion, finely chopped – 1
- olive oil – 1 tbsp
- diced tomatoes – 14 oz
- chicken stock – 5 cups
- corn kernels – 1 1/2 cups
- lima beans or butter beans, drained – 1 cup
- potatoes, diced – 10 oz
- Worcestershire sauce – 1 tbsp
- paprika – 1 tsp
- salt – 1/2 tsp
- black pepper – 1/2 tsp
Method
1. Heat the oil in a pot and cook the onion for 3 minutes. Add the chicken and cook briefly.
2. Add the tomatoes, stock, potatoes, paprika, salt and pepper. Simmer for 20 minutes.
3. Add the corn, lima beans and Worcestershire sauce and let the stew cook gently for 10 more minutes.
4. If you like, shred the chicken into slightly smaller pieces.
5. Serve the stew hot in deep bowls.
