Broccoli mash is a greener, slightly lighter take on stamppot, but the cheese and bacon make sure nobody feels deprived.
Serves: 4 people

Ingredients
- Floury potatoes – 1.2 kg
- Broccoli – 1 kg
- Milk – 200 ml
- Butter – 50 g
- Grated hard cheese – 80 g
- Mustard – 1 tbsp
- Bacon lardons – 150 g
- Nutmeg – 1 pinch
Method
1. Cook the potatoes until tender and boil the broccoli in another pan until just soft. Keep a little of the broccoli cooking liquid. 2. Fry the bacon until crisp and set it aside. Mash the potatoes with the broccoli, milk, butter and a splash of the reserved cooking liquid. 3. Stir in the cheese, mustard and nutmeg and keep mashing until the broccoli is evenly distributed but still visible in the mash. 4. Pile the stamppot onto warm plates and finish with the crisp bacon.
