Broccoli and Stilton soup is one of the best-known pub and lunchroom soups in Britain. The broccoli keeps the soup fresh while Stilton gives it a deep savoury character.

Ingredients
- butter – 1 tbsp
- onion, chopped – 1 medium
- potato, diced – 1 medium
- broccoli florets – 1 lb
- vegetable stock – 5 cups
- whole milk – 1 cup
- Stilton cheese, crumbled – 5 oz
- salt – to taste
- black pepper – to taste
Method
1. Melt the butter in a soup pot and cook the onion and potato for a few minutes.
2. Add the broccoli and stock and simmer until the vegetables are tender.
3. Blend the soup until smooth, then stir in the milk.
4. Add the Stilton and let it melt gently into the soup without boiling hard.
5. Season with salt and pepper and serve hot.
