Brazilian cassava soup

Caldo de mandioca is a Brazilian cassava soup blended until velvety and often served with sausage. It is a warming soup with a full, earthy flavor.

Serves: 6 people

Preparation time: 35 min

Ingredients

  • cassava, peeled and cut into chunks – 1.75 lb
  • chicken stock – 7 cups
  • smoked sausage, sliced – 10 oz
  • onion, finely chopped – 1
  • garlic, minced – 3 cloves
  • oil – 1 tbsp
  • scallions, sliced – 3
  • parsley, chopped – 2 tbsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp

Method

1. Cook the cassava in the stock for 25 to 30 minutes until very soft.
2. Meanwhile brown the sausage in a dry skillet. Lift it out and keep aside.
3. In the same skillet, cook the onion and garlic in the oil for 3 minutes.
4. Blend the cassava and stock until smooth, then stir in the onion mixture and half of the sausage. Warm for 5 minutes more.
5. Ladle into bowls and top with the remaining sausage, scallions and parsley.
