Brussels ground-grown chicory braised gently in butter until tender and lightly caramelized.
Serves: 4 people
Preparation time: 25 min
Ingredients
- Brussels chicory – 8
- butter – 3 tbsp
- sugar – 1 tsp
- lemon juice – 1 tsp
- salt – to taste
- white pepper – to taste
Method
1. Trim the chicory and remove any damaged outer leaves.
2. Melt the butter in a wide pan and lay in the chicory.
3. Season with sugar, lemon juice, salt and white pepper.
4. Cover and braise gently for 20 to 25 minutes, turning once, until tender and lightly colored.
5. Remove the lid for the last few minutes if you want a little more caramelization.
6. Serve hot as a vegetable side.
