A comforting Balkan soup with tarhana, butter, paprika and a softly tangy taste.
Serves: 4 people

Ingredients
- tarhana – 1 cup
- water or stock – 5 cups
- butter – 1 tbsp
- tomato puree – 1 tbsp
- paprika – 1 tsp
- dried mint – 1 tsp
- plain yogurt – 1/4 cup
- salt – to taste
- black pepper – to taste
Method
1. Whisk the tarhana with a little cold water so it loosens without lumps.
2. Bring the stock to a simmer and stir in the tarhana.
3. Add the tomato puree, paprika and mint and cook for 10 minutes while stirring now and then.
4. Stir in the butter and yogurt and warm gently.
5. Season with salt and black pepper and serve hot.
