Whole small anchovies, lightly floured and fried until crisp, served simply with salt and lemon.

Serves: 4 people

Preparation time: 30 min

Ingredients

  • Fresh small anchovies – 700 g
  • Plain flour or frying flour – 150 g
  • Olive oil – for frying
  • Salt – to taste
  • Lemon wedges – to serve

Method

STEP 1
Clean the anchovies if needed, then rinse briefly and dry them thoroughly with kitchen paper.

STEP 2
Salt the fish lightly and coat them in flour. Shake the fish in a sieve or colander to remove loose flour.

STEP 3
Heat a generous layer of olive oil. Fry the anchovies in batches so they have room to crisp.

STEP 4
Turn once if needed and remove them when golden and firm. Small fish cook quickly, so watch them closely.

STEP 5
Drain, season with a final pinch of salt and serve hot with lemon.
