Pan-fried blood sausage served with warm applesauce, a sweet-savory Belgian comfort dish.
Serves: 4 people

Ingredients
- blood sausage – 4 thick pieces
- butter – 2 tbsp
- apples – 6
- water – 3 tbsp
- sugar – 1 tbsp
- cinnamon – 1/2 tsp
- lemon juice – 1 tsp
- salt – to taste
Method
1. Peel, core and chop the apples. Put them in a saucepan with the water, sugar, cinnamon and lemon juice.
2. Cook the apples gently for 10 to 15 minutes until soft, then mash into applesauce. Add a pinch of salt if needed.
3. Score the blood sausage lightly so it does not burst.
4. Fry it gently in butter for 4 to 5 minutes per side until heated through and lightly crisp outside.
5. Spoon the warm applesauce onto plates.
6. Serve the blood sausage on top or alongside.
