This oven favourite starts with a quick, batter-like focaccia bread that is baked first and topped afterwards. It is clever, practical and excellent when you want to feed several people without wrestling with traditional pizza shaping.

Serves: 8 people

Preparation time: 90 min

Ingredients

  • Bread flour – 420 g
  • Instant yeast – 2 tsp
  • Salt – 1 1/2 tsp
  • Warm water – 360 ml
  • Olive oil – 2 tbsp
  • Tomato sauce – 200 ml
  • Mozzarella, grated – 200 g
  • Oregano – 1 tsp
  • Extra toppings – as desired

Method

1. Mix the flour, yeast, salt, water and olive oil into a thick batter-like dough. Spread it into an oiled 9 x 13 inch pan.
2. Let the dough rise until noticeably puffy, then bake it as a plain focaccia-style base until lightly golden and set.
3. Remove the base from the oven and, if you like, split it horizontally or leave it whole depending on how thick you want the finished pizza.
4. Top with tomato sauce, mozzarella, oregano and any extra toppings you want to use.
5. Return to the oven and bake until the cheese melts and the edges turn crisp.
6. Slice into generous squares. This method is especially useful when you need a big, satisfying tray pizza without much shaping work.
