Blinis with smoked salmon and avocado cream

These blinis are a little richer and greener than the classic version, with smooth avocado cream underneath the smoked salmon.

Serves: 6 people

Preparation time: 60 min

Ingredients

  • Buckwheat flour – 100 g
  • Plain flour – 100 g
  • Yeast – 7 g
  • Milk – 250 ml
  • Eggs – 2
  • Butter or oil – for frying
  • Smoked salmon – 200 g
  • Avocado – 2
  • Lemon juice – 1 tbsp
  • Crème fraîche – 2 tbsp
  • Dill or chives – a few sprigs
  • Salt and black pepper – to taste

Method

1. Make or mix a blini batter and fry small rounds until softly golden on both sides.
2. Mash the avocado with lemon juice and crème fraîche into a smooth cream, seasoning well so it tastes lively rather than flat.
3. Spread or spoon the avocado cream over the cooled blinis.
4. Top with smoked salmon and finish with dill or chives. Serve the blinis the same day so the avocado stays fresh in colour and taste.
