Tiny yeasted pancakes with smoked salmon, caviar and crème fraîche: old-world luxury in bite-sized form.

Ingredients
- Buckwheat flour – 120 g
- Plain flour – 80 g
- Yeast – 7 g
- Milk – 250 ml
- Eggs – 2
- Butter – 30 g
- Smoked salmon – 200 g
- Crème fraîche – 150 g
- Caviar – 50 g
- Dill – 2 tbsp
- Salt – 1 pinch
Method
Make a loose yeasted batter and cook small blini in butter until golden. Top each with crème fraîche, smoked salmon, a little caviar and dill. Serve warm or just lukewarm.
