Crisp potatoes, sweet apple and deeply savoury black pudding make this skillet dish rustic, rich and unexpectedly moreish.

Ingredients
- Black pudding – 300 g
- Potatoes, cooked – 500 g
- Apple – 1 tart
- Onion – 1
- Butter – 20 g
- Oil – 1 tbsp
- Thyme – 1 tsp
- Parsley – 1 tbsp
- Fried eggs – optional
Method
Cube the potatoes and black pudding. Cook the onion in butter and oil until soft, then add the potatoes and fry until crisp. Add the apple, thyme and black pudding and cook until everything is browned and hot. Finish with parsley and, if you like, top with fried eggs.
