A rich bean soup with cumin, lime and garlic that is hearty enough for dinner.
Serves: 4 people
Preparation time: 25 min
Ingredients
- Olive oil – 1 tbsp
- Onion – 1
- Garlic – 3 cloves
- Ground cumin – 2 tsp
- Black beans – 720 g
- Vegetable stock – 1 l
- Lime – 1
- Coriander – 1 handful
Method
STEP 1 Fry onion and garlic and add cumin.
STEP 2 Add beans and stock and simmer for 20 minutes.
STEP 3 Blend part of the soup for a thicker texture.
STEP 4 Finish with lime juice and coriander.
