Bisi damper is a Torres Strait Islander cassava cake with a firm yet moist texture. It is a useful recipe for learning how grated cassava behaves in a cake-like bake.

Ingredients
- Cassava, peeled and grated – 1 kg
- Coconut milk – 400 ml
- Sugar – 150 g
- Eggs – 2
- Butter for greasing – a little
Method
1. Heat the oven and grease a baking dish well.
2. Mix the grated cassava with the coconut milk, sugar and eggs until evenly combined.
3. Spread the mixture into the dish and smooth the top. Because cassava is dense, an even thickness helps it bake more uniformly.
4. Bake until firm and lightly golden on top.
5. Let the cake cool a little before cutting. It slices more neatly once it has had time to settle.
