This Belgian bean soup with savoy cabbage is simple, nourishing and lovely on a cold day. Thanks to the beans, potato and a little bacon, it is a bowl that truly satisfies.

Ingredients
- olive oil – 1 tbsp
- smoked bacon, sliced – 3 1/2 oz
- onion, chopped – 1 medium
- carrot, diced – 1 medium
- celery stalk, sliced – 1
- savoy cabbage, shredded – 10 oz
- potatoes, diced – 10 oz
- white beans, drained – 2 cans
- chicken stock – 5 cups
- fresh thyme – 1 tsp
- flat-leaf parsley, chopped – 2 tbsp
- salt – 1/2 tsp
- black pepper – 1/2 tsp
Method
1. Heat the oil in a soup pot and cook the bacon for 3 minutes.
2. Add the onion, carrot and celery and cook for 4 minutes more.
3. Add the savoy cabbage, potatoes, beans, stock and thyme and bring to a boil.
4. Let the soup simmer for 25 minutes until the potatoes are tender and the cabbage is soft.
5. Season with salt and pepper and finish with parsley.
