A smooth vanilla pudding finished with crumbled speculoos biscuits, a simple Belgian dessert that fits both festive buffets and family tables.

Ingredients
- whole milk – 3 cups
- heavy cream – 1/2 cup
- egg yolks – 4
- granulated sugar – 1/3 cup
- cornstarch – 3 tbsp
- vanilla bean paste – 1 tsp
- unsalted butter – 1 tbsp
- speculoos cookies, crushed – 8 cookies
- pinch of salt – 1
Method
1. Heat the milk and cream in a saucepan until steaming but not boiling.
2. In a bowl, whisk the egg yolks with the sugar, cornstarch, vanilla and salt until smooth.
3. Pour a little of the hot milk into the yolk mixture while whisking, then return everything to the pan.
4. Cook over low heat, stirring constantly, until the pudding turns thick and silky.
5. Stir in the butter, divide the pudding over serving glasses and let it cool slightly.
6. Chill until fully set, then finish with crushed speculoos before serving.
