Belgian Shrimp Croquettes

A crisp crumb coating and a soft, intensely savoury filling packed with grey shrimp make these croquettes one of the great Belgian brasserie starters.

Serves: 4 people

Preparation time: 180 min

Ingredients

  • Grey shrimp – 300 g
  • Milk – 500 ml
  • Butter – 100 g
  • Flour – 120 g
  • Egg yolks – 2
  • Gelatine leaves – 2
  • Parsley – 2 tbsp
  • Lemon juice – 1 tbsp
  • Nutmeg – 1 pinch
  • Salt – to taste
  • Black pepper – to taste
  • Eggs – 2
  • Breadcrumbs – 150 g
  • Flour for breading – 80 g
  • Oil for frying – as needed

Method

1. Soak the gelatine, make a thick roux with the butter and flour, then whisk in the milk until you have a very firm sauce.
2. Stir in the egg yolks, gelatine, parsley, lemon juice and most of the shrimp. Season carefully with pepper, salt and nutmeg.
3. Spread the mixture in a tray and let it chill until fully set. This resting time is what makes shaping easier later on.
4. Portion, flour, egg and breadcrumb the croquettes, then fry until deep golden and serve piping hot with lemon.
