A fiery Belgian frituur sauce made from mayonnaise and harissa for people who like serious heat with their fries.

Serves: 4 people

Preparation time: 20 min

Ingredients

  • mayonnaise – 1 cup
  • harissa – 2 tbsp
  • ketchup – 1 tbsp
  • lemon juice – 1 tbsp
  • paprika – 1/2 tsp
  • salt – 1/4 tsp

Method

1. Stir the mayonnaise, harissa and ketchup together until fully blended.
2. Add the lemon juice, paprika and salt, then mix again.
3. Taste and add a little more harissa if you want a hotter sauce.
4. Chill briefly before serving with fries or grilled meat.
