Pumpkin and leek make a naturally soft soup that needs no cream at all. This is an easy Belgian-style family soup for autumn and winter.

Ingredients
- olive oil – 1 tbsp
- leek, sliced – 1 large
- onion, chopped – 1
- pumpkin, peeled and diced – 1 1/2 lb
- potato, diced – 1 medium
- vegetable stock – 5 cups
- ground cumin – 1/2 tsp
- salt – 3/4 tsp
- black pepper – 1/4 tsp
Method
1. Heat the olive oil in a soup pot and cook the leek and onion for 5 minutes.
2. Add the pumpkin, potato, stock and cumin and simmer for 20 minutes.
3. Blend the soup until smooth.
4. Season with salt and black pepper and serve hot.
