Belgian Potato Soup with Bacon and Leek

Potato soup with bacon and leek is simple, filling and exactly the kind of meal soup that works well on a busy weekday. The texture stays rustic and homey without becoming too heavy.

Serves: 4 people

Preparation time: 30 min

Ingredients

  • smoked bacon, sliced – 5 oz
  • butter – 1 1/2 tbsp
  • leeks, sliced – 2
  • onion, chopped – 1
  • potatoes, diced – 1 1/3 lb
  • chicken stock – 5 1/2 cups
  • celery stalk, chopped – 1
  • heavy cream – 1/3 cup
  • black pepper – 1/2 tsp
  • chives, chopped – 2 tbsp

Method

1. Brown the bacon briefly and lift it out of the pan.
2. Melt the butter in the same pan and cook the leek, onion and celery for 4 minutes.
3. Add the potatoes and stock and simmer for 25 minutes.
4. Roughly mash some of the potatoes and stir the bacon and cream into the soup.
5. Season with pepper and finish with chives.
