A light Belgian petit gâteau of crisp meringue and whipped cream, coated with chocolate shavings for a festive bakery finish.

Serves: 8 people

Preparation time: 60 min

Ingredients

  • egg whites – 4
  • granulated sugar – 1 cup
  • powdered sugar – 1/2 cup
  • heavy cream – 2 cups
  • powdered sugar for cream – 2 tbsp
  • vanilla extract – 1 tsp
  • dark chocolate shavings – 1 cup

Method

1. Preheat the oven to 225°F and line baking trays with parchment paper.
2. Whisk the egg whites to soft peaks, then gradually add the granulated sugar until the meringue is glossy and firm.
3. Fold in the powdered sugar.
4. Pipe or spoon small rounds onto the trays.
5. Bake for 1 hour, then let the meringues dry out in the switched-off oven with the door slightly open.
6. Whip the cream with the powdered sugar and vanilla until softly firm.
7. Sandwich two meringues together with whipped cream, then coat the outside with more cream.
8. Cover the pastries with chocolate shavings and chill before serving.
