Crisp meat croquettes with a rich beef ragout center, ideal as a snack from the frituur or as a homemade appetizer.

Serves: 6 people

Preparation time: 25 min

Ingredients

  • butter – 4 tbsp
  • flour – 1/2 cup
  • beef stock – 2 cups
  • cooked beef, finely shredded – 1 1/2 cups
  • parsley, chopped – 2 tbsp
  • salt – 1/2 tsp
  • black pepper – 1/2 tsp
  • nutmeg – 1/4 tsp
  • eggs, beaten – 2
  • breadcrumbs – 1 1/2 cups
  • flour for coating – 1/2 cup
  • frying oil – 6 cups

Method

1. Melt the butter in a saucepan and stir in the flour to make a pale roux.
2. Gradually whisk in the beef stock until you have a thick smooth ragout.
3. Fold in the shredded beef, parsley, salt, pepper and nutmeg.
4. Spread the mixture on a tray and chill until completely firm.
5. Shape the cold ragout into croquettes, coat them in flour, then in egg, then in breadcrumbs.
6. Fry until golden brown and drain well before serving.
