Classic double-fried Belgian fries with a fluffy center and crisp crust.

Serves: 4 people

Preparation time: 35 min

Ingredients

  • floury potatoes – 2 lb
  • frying oil – enough for deep-frying
  • salt – to taste

Method

1. Peel the potatoes and cut them into thick fries.
2. Soak in cold water for 30 minutes, then dry thoroughly.
3. Fry first at 140°C until cooked but still pale.
4. Let them rest for a few minutes.
5. Fry again at 180°C until golden and crisp.
6. Salt immediately and serve hot.
