A classic Belgian brasserie dessert of vanilla ice cream with warm dark chocolate sauce, whipped cream and a crisp wafer biscuit.

Serves: 4 people

Preparation time: 90 min

Ingredients

  • vanilla ice cream – 8 scoops
  • heavy cream – 1 cup
  • powdered sugar – 2 tbsp
  • vanilla extract – 1 tsp
  • dark chocolate, finely chopped – 5 oz
  • heavy cream for the sauce – 1/2 cup
  • unsalted butter – 1 tbsp
  • wafer biscuits – 4
  • chocolate shavings – 2 tbsp

Method

1. Whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. Keep chilled until serving.
2. Place the chopped dark chocolate, the cream for the sauce and the butter in a heatproof bowl. Melt gently over barely simmering water, stirring until the sauce is smooth and glossy. Keep warm, not boiling.
3. Put two scoops of vanilla ice cream into each dessert glass or coupe.
4. Spoon some warm chocolate sauce over the ice cream, then finish with whipped cream, chocolate shavings and a wafer biscuit.
5. Serve immediately so the contrast between the cold ice cream and warm chocolate stays at its best.
