This bistro-style Belgian tartare is all about balance: beef, shallot, capers, gherkins, parsley, mustard and yolk, mixed at the last moment and served immediately.

Ingredients
- Beef – 600 g
- Shallots – 2
- Capers – 30 g
- Gherkins – 40 g
- Parsley – 1 small bunch
- Spicy mustard – 1 tbsp
- Tabasco – 3 drops
- Worcestershire sauce – 2 tbsp
- Egg yolks – 2
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Trim the beef if needed and mince or chop it finely. Peel the shallots and chop them finely with the capers and gherkins. Chop the parsley last so it stays bright.
STEP 2
Combine the beef with the shallots, capers, gherkins, mustard, parsley, tabasco, Worcestershire sauce and egg yolks. Mix gently until everything is evenly seasoned.
STEP 3
Taste and finish with salt and pepper. Shape the tartare on plates and serve straight away, traditionally with fries or good bread.
STEP 4
Do not leave this tartare sitting around: it is at its best when mixed shortly before serving and eaten immediately.
