This chilled Belgian-style soup is light, tangy and refreshing. Cucumber, radish and fresh herbs make it ideal for a warm lunch or as a cool starter.

Ingredients
- buttermilk – 3 cups
- Greek yogurt – 3/4 cup
- cucumber, finely diced – 1 large
- radishes, thinly sliced – 6
- green onion, finely sliced – 2
- fresh dill, chopped – 2 tbsp
- fresh chives, chopped – 2 tbsp
- lemon juice – 1 tbsp
- salt – 3/4 tsp
- black pepper – 1/4 tsp
- hard-boiled eggs, chopped – 2
Method
1. Whisk the buttermilk and Greek yogurt together in a large bowl until smooth.
2. Stir in the cucumber, radishes, green onion, dill, chives and lemon juice.
3. Season the soup with salt and black pepper, then chill it for at least 30 minutes so the flavors can blend.
4. Divide the soup among bowls and finish each portion with chopped hard-boiled egg just before serving.
