Layers of sweet butternut, savory ham and melting abbey cheese bake into pure Belgian comfort.

Ingredients
- butternut squash – 1 medium (about 2 lb), peeled and thinly sliced
- cooked ham – 7 oz, torn into pieces
- abbey cheese – 7 oz, sliced or grated
- heavy cream – 1 cup
- whole milk – 1/2 cup
- eggs – 2
- sage – 1 tbsp, chopped
- butter – 1 tbsp
- garlic – 1 clove, halved
- salt – to taste
- black pepper – to taste
Method
STEP 1
Heat the oven to 375°F. Rub a baking dish with the cut garlic and grease it with the butter.
STEP 2
Whisk together the cream, milk, eggs, sage, salt and black pepper.
STEP 3
Layer the butternut, ham and abbey cheese in the dish. Pour the cream mixture over everything.
STEP 4
Cover loosely with foil and bake for 35 minutes. Remove the foil and bake 15 minutes more until golden and tender.
STEP 5
Let the gratin rest for 5 minutes before serving.
