This Belgian autumn bake with butternut, apple, bacon and chipolata is generous, savoury and slightly sweet at the same time.
Why pair apple with butternut and bacon?
Apple adds freshness and gentle sweetness, butternut brings softness and bacon adds salt and depth. Together with chipolata, it becomes a hearty bake that still feels balanced.

Ingredients
- butternut squash – 1 medium (about 2 lb), peeled and cubed
- apples – 2, cut into wedges
- chipolata sausages – 8
- smoked bacon lardons – 5 oz
- red onion – 1 large, cut into wedges
- olive oil – 1 tbsp
- whole-grain mustard – 1 tbsp
- thyme – 1 tsp
- salt – to taste
- black pepper – to taste
Method
STEP 1
Heat the oven to 400°F. Put the butternut, apples and onion into a large baking dish.
STEP 2
Stir together the olive oil, mustard, thyme, salt and black pepper and toss with the vegetables.
STEP 3
Nestle in the chipolata sausages and scatter over the bacon lardons.
STEP 4
Bake for 35 to 40 minutes, stirring once, until the butternut is tender and the sausages are browned and cooked through.
STEP 5
Serve straight away while everything is hot and glossy.
