Earthy beetroot, salty feta and crunchy walnuts make a familiar gluten-free salad.

Ingredients
- Cooked beetroot – 500 g
- Rocket – 80 g
- Feta – 120 g
- Walnuts – 80 g
- Olive oil – 2 tbsp
- Balsamic vinegar – 1 tbsp
- Honey – 1 tsp
Method
STEP 1 Slice the beetroot and arrange with rocket.
STEP 2 Crumble over the feta and scatter with walnuts.
STEP 3 Whisk oil, balsamic and honey and spoon over the salad.
