Beetroot feta walnut salad

Earthy beetroot, salty feta and crunchy walnuts make a familiar gluten-free salad.

Serves: 4 people

Preparation time: 11 min

Ingredients

  • Cooked beetroot – 500 g
  • Rocket – 80 g
  • Feta – 120 g
  • Walnuts – 80 g
  • Olive oil – 2 tbsp
  • Balsamic vinegar – 1 tbsp
  • Honey – 1 tsp

Method

STEP 1 Slice the beetroot and arrange with rocket.
STEP 2 Crumble over the feta and scatter with walnuts.
STEP 3 Whisk oil, balsamic and honey and spoon over the salad.
