Beetroot broccoli and mackerel grain bowl

A colourful grain bowl using smoked fish and ready-cooked beetroot for speed.

Serves: 2 people

Preparation time: 15 min

Ingredients

  • cooked grains – 250 g
  • cooked beetroot – 200 g
  • tenderstem broccoli – 200 g
  • smoked mackerel – 150 g
  • yogurt – 2 tbsp

Method

STEP 1
Blend or mash half of the beetroot with the yogurt until smooth, then season lightly. This gives you a quick pink dressing or spread that ties the bowl together.
STEP 2
Cut the remaining beetroot into wedges. Cook the broccoli in a hot pan until lightly charred, then add a splash of water and cook briefly until just tender. That two-stage cooking keeps the broccoli both tasty and green.
STEP 3
Warm the grains and divide them between bowls. Add the beetroot dressing, the extra beetroot and the broccoli.
STEP 4
Flake over the smoked mackerel and finish with herbs or pepper just before serving.
