A savory beer sauce with shallot and stock, perfect for meat dishes.

Ingredients
- shallot – 1
- butter – 1 tbsp
- flour – 1 tbsp
- amber beer – 1 cup
- stock – 1 cup
- mustard – 1 tsp
- brown sugar – 1 tsp
- salt – to taste
- black pepper – to taste
Method
1. Cook the chopped shallot in the butter until soft.
2. Stir in the flour.
3. Add the beer and stock gradually and whisk smooth.
4. Simmer until the sauce has the desired consistency.
5. Stir in the mustard and brown sugar and season with salt and pepper.
6. Serve warm.
