Beer Cheese Soup

Beer and cheese give this German soup a full, savoury flavour that pairs beautifully with bread or pretzels. Potato rounds out the texture and makes it extra comforting.

Serves: 4 people

Ingredients

  • butter – 2 tbsp
  • onion, chopped – 1 medium
  • garlic, minced – 2 cloves
  • flour – 2 tbsp
  • lager beer – 1 1/2 cups
  • chicken stock – 4 cups
  • potatoes, diced – 2 medium
  • sharp cheese, grated – 1 1/2 cups
  • heavy cream – 1/3 cup
  • mustard – 1 tsp
  • salt – 1/2 tsp
  • black pepper – 1/2 tsp

Method

1. Melt the butter in a pot and cook the onion and garlic until soft.
2. Stir in the flour and cook for 1 minute, then pour in the beer and stock while whisking to keep the soup smooth.
3. Add the potatoes and simmer until tender.
4. Stir in the cheese, cream and mustard and heat gently until the cheese has melted completely.
5. Season well and serve hot.
