An Asian-leaning tartare with soy, mirin and chilli oil notes, finished with a soy-marinated yolk that makes the whole plate richer and deeper.

Ingredients
- Beef fillet, finely chopped – 500 g
- Soy sauce – 2 tbsp
- Mirin – 1 tbsp
- Chilli oil – 1 tsp
- Shallot, finely chopped – 1
- Chives, chopped – 1 tbsp
- Egg yolks – 4
- Sesame oil – a few drops
- Black pepper – to taste
Method
STEP 1
Marinate the egg yolks gently in soy sauce with a little mirin while you prepare the tartare. They should take on flavour but still stay soft and glossy.
STEP 2
Season the chopped beef with shallot, chives, a little soy, a touch of chilli oil and just a few drops of sesame oil. Keep the mix balanced so the beef still leads.
STEP 3
Shape the tartare on chilled plates and set a soy-glazed yolk on top of each one.
STEP 4
Serve immediately while everything is still very cold and sharply defined.
