Beef roulades in gravy are stuffed beef rolls that braise slowly until tender while creating a rich sauce.

Why are beef roulades braised?

Roulades need time to become tender and to let their filling flavour the gravy. Gentle braising gives you beef that slices well and a sauce that belongs with the dish.

Ingredients

  • thin beef slices – 8
  • mustard – 4 tbsp
  • bacon strips – 8
  • onion, sliced – 1 large
  • pickles, sliced – 3
  • oil – 2 tbsp
  • beef broth – 2 cups
  • tomato paste – 1 tbsp
  • flour – 1 tbsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp

Method

1. Season the beef slices with salt and pepper and spread them with mustard.
2. Top each slice with bacon, onion and pickle, then roll up tightly and secure.
3. Brown the roulades all over in the oil.
4. Add the tomato paste and cook briefly.
5. Pour in the broth and braise the roulades gently for 1 1/2 hours.
6. Remove the meat, thicken the gravy with the flour and serve it alongside.
