Slow-cooked beef in coconut milk, lemongrass and warm spices until deeply caramelised and intensely fragrant.
What is rendang daging?
Rendang daging is Indonesian beef slowly cooked in coconut milk and a powerful spice paste. The sauce reduces into a dark, intense dish. Patience matters more than speed here.

Ingredients
- Beef chuck – 1 kg
- Coconut milk – 800 ml
- Onion – 2
- Garlic cloves – 5
- Fresh ginger – 4 cm
- Galangal – 4 cm
- Lemongrass stalks – 2
- Red chillies – 3
- Turmeric – 1 tsp
- Ground coriander – 2 tsp
- Kaffir lime leaves – 4
- Tamarind paste – 1 tbsp
- Palm sugar or brown sugar – 1 tbsp
- Salt – to taste
Method
STEP 1
Blend onion, garlic, ginger, galangal and chillies into a spice paste.
STEP 2
Fry the paste in a heavy pan until fragrant. Add turmeric, coriander, lemongrass and kaffir lime leaves.
STEP 3
Add the beef and coat it well with the spices. Pour in coconut milk, tamarind and sugar.
STEP 4
Simmer gently for 2.5 to 3 hours, stirring now and then, until the meat is tender and the sauce turns thick and dark.
STEP 5
Season to taste and serve with rice.
