Basel flour soup is a dark roasted flour broth with surprisingly deep flavor. The ingredient list is simple, but the soup asks for care while browning the flour.

Ingredients
- butter – 3 tbsp
- flour – 1/2 cup
- small onion, finely chopped – 1
- vegetable stock – 5 cups
- dry white wine – 1/3 cup
- Gruyere, grated – 2 oz
- salt – 1/2 tsp
- black pepper – 1/4 tsp
Method
1. Melt the butter in a pot and stir in the flour. Roast over low heat for 12 to 15 minutes until the mixture turns a deep chestnut brown.
2. Add the onion and cook for 2 minutes more.
3. Deglaze with the wine and then gradually whisk in the stock.
4. Simmer the soup for 15 minutes and season with salt and pepper.
5. Serve with grated Gruyere on top.
